New Finder Window
Aside from this being standard (though undocumented!) Mac behaviour since at least System 7 (as noted in the previous two comments), this has nothing to do with launching an application. If you hold down option while double-clicking a folder the same thing happens -- the new folder will open and the old one will close. Not only that, but the same behaviour applies in the results to a 'Find File' window -- holding down option while double-clicking an icon closes the Find File results window while opening the item clicked. Though not documented, this option trick is usually quite consistent throughout the Mac OS.

Also, to close a bunch of open windows simultaneously, Command-Option-click on the red button in one of the open windows. This is also an old Apple technique. --- dolphy

I think all you need here is the Option [Alt] key -- if you Option-click any window's close button, all the windows in that applicaton close. Likewise, if you do this to the '-' button, all the app's windows should minimize to the Dock. I say 'should' because it's a well-known behavior from System 7 onwards, but some apps don't cooperate, such as [wait for it ..] iTunes. Hmm; go figure. --- -- osxpounder
Oh, and for you keyboard users, selecting the icon and hitting command-option-O has the exact same effect as option-doubleclicking.
command-option-down also closes the window while opening the selected objects (folders, files, apps). command-option-up closes the current window and opens the parent folder. App to convert speech to text in mac. Been using these since System 7.
